POSITION: Kitchen Supervisor

General Duties:

  • Oversee daily jail’s foodservices operations. Ensure food service operations are conducted in accordance with expressed VCSO goals, policies, and directives.
  • Supervise and train kitchen managers – conduct staff meetings of food service staff as required. Prepare all food service personnel schedules. Monitor, assess, and evaluate the duty performance of all assigned food services personnel. Recommend appropriate personnel actions as necessary.
  • Make trustees to ensure coverage of all shifts. Prepare all necessary administrative requirements for trustee processing through Inmate Services and medical staff. Maintain current roster of trustees for kitchen staff and floor officers. Pull trustees and dress them out.
  • Ensure all assigned food service employees and trustees are properly trained to perform food service functions to include meal planning, food preparation procedures, equipment maintenance, food storage procedures, and quality control procedures for dispensing and serving food in large quantities.
  • Create and maintain menu plans for the jail. Work with registered dietician in maintaining approved menus. Maintain best menu options allowed by annual budget.
  • Prepare bi-annual food and supply bid for the jail. Review and compare bids to offer recommendations for food contract(s). Maintain current contact list of vendors.
  • Conduct ordering / inventory of all food and supplies for the kitchen and various parts of the jail. See proper quantities are maintained for the kitchen, laundry and jail. Reconcile food orders, deliveries, and invoices. Identify and coordinate reconciliation of shortages of required food items.
  • Create and maintain separate special diets as prescribed by medical staff and or those for religious reasons.
  • Maintain current state credentials as required by Texas Commission on Jail Standards.
  • Maintain an environment conducive to protecting the health and well-being of jail personnel and inmates through high levels of food safety, sanitation, and kitchen equipment maintenance standards.
  • Kitchen operates from 4:30 am until approximately 8:30 pm, seven days a week – cover shifts as needed.

Required Knowledge, Skills and Abilities:

  • Must be able to effectively lead and manage others
  • Applicant must be able to communicate effectively both orally and in writing – bilingual (Spanish/English) abilities are an asset, though not required
  • Engage in physical activities
  • Must be able to obtain a Jailer’s License through TCOLE

Salary: $21.74 hourly
